This is a great way to end our vacation. Football season is here, and the house is cooling down — my kitchen is no longer sweltering hot. I am a master of making football food out of whatever I find in the house, so I started the morning searching for food to cook. I hit the jackpot.
Tollhouse Chocolate Chip Cookies

First I found some chocolate chip cookie dough I froze earlier this year. I make a batch and freeze it in batches of 12 — because if I cook the whole thing, I will eat the whole thing. I love warm cookies.
Steak Fingers
Next I found some steak cutlets. Texans love chicken fried steak. I am not great at cooking them, but they tasted pretty good. I cut the steak in strips, dipped each strip in an egg wash (beaten egg with a splash of milk), then dredged them in flour and seasoning salt. I pan fried them in some vegetable oil and served them with ketchup. You could also serve them with cream gravy.
Chips and Queso
This is just a plain jar of queso with On the Border chips. Sometimes simple is the whole point.
Cowboys Smashed Potatoes
The smashed potatoes were made by boiling red potatoes in slightly salted water. Let them cool a little, then smash them with a potato masher. Drizzle with olive oil and sprinkle with seasoning salt. Cook in the oven at 400°F for about 25–30 minutes, until the edges crisp up, then top with shredded cheddar cheese and return to the heat until the cheese melts. You can throw crumbled bacon on top along with some chopped green onions. Serve with sour cream.
