After three weeks of coughing I took a second trip to the doctor’s office. They gave me a shot in the hip and gave me about six prescriptions. They almost sent me to the ER. That would suck. Dinky’s on the mend. Peace out. Dinky

Cowboys Football Fan
The boys let me down. I got all ready for Thursday night football. I brought home pizza and wings . Papi rushed home from work. I stayed up late to watch the game. Passes were dropped. Passes were intercepted. Just downright embarrasing.

Spanish Omelet from Lunch LeftoversYears ago I had Spanish exchange students in my home. One of them brought me a cookbook that featured omelets — potato and onion based. Today’s leftover potatoes were calling out to me to turn them into a Spanish omelet.Onions in ButterI sautéed a small onion in 1/4 cup of butter.Leftover Smashed PotatoesI added my smashed red potatoes and cheese into the mix. I beat two large eggs and poured them on top of the potato mixture. I topped it with ketchup. I bet salsa would be good too.Dang, this is good food. Papi is not ready to eat yet — he’s napping.
