The Next Chapter

Hi guys. I am back. I had to take some time off to recompose myself. I lost my sweetheart of a husband, Chuck, to liver failure along with complications from covid. It was a very sad time. I still have moments of grief. I guess I always will.

Just like a good book, our lives have many chapters. I am here to start a new chapter. I am in a life stage of self-discovery. I am very excited to see what I find out about myself.

I have started a practice of keeping a top 100 list. I spend about 30 to 45 minutes writing down a list of 100 ideas of things I would like to do, see, have, be or accomplish. This list can be very random. It is brainstorming. The list can even include the impossible. I do not grade myself on the accomplishments. When I complete one, I add a new one to the list. My list forever changes. Life is always in flux. I guess you could say that my book is never ending. It is like my list has ADHD, just like me.

I also make a daily to do list. It would be great if my daily list helps accomplish my bigger goals. Sometimes they do and sometimes they don’t. It’s not like I have anyone to answer to except for myself. One thing on my daily list was to start up on this blog again. I love it. I am not sure if my life is exciting enough for anyone else to read about but maybe it is. LOL.

Caught a Cold after I got Over a Cold

Cold

I worked very hard two weeks ago to get over a cold before vacation. I even went to the doctor on a Sunday. Then… Peter got the sniffles from being in the rain…I kissed Pete…I have the sniffles

Spanish Omelet from Lunch LeftoversYears ago I had Spanish exchange students in my home. One of them brought me a cookbook that featured omelets — potato and onion based. Today’s leftover potatoes were calling out to me to turn them into a Spanish omelet.Onions in ButterI sautéed a small onion in 1/4 cup of butter.Leftover Smashed PotatoesI added my smashed red potatoes and cheese into the mix. I beat two large eggs and poured them on top of the potato mixture. I topped it with ketchup. I bet salsa would be good too.Dang, this is good food. Papi is not ready to eat yet — he’s napping. I will have to heat his up.Peace out. Dinky

Cowboys Game-Day Food From Whatever’s in the House

This is a great way to end our vacation. Football season is here, and the house is cooling down — my kitchen is no longer sweltering hot. I am a master of making football food out of whatever I find in the house, so I started the morning searching for food to cook. I hit the jackpot.

Tollhouse Chocolate Chip Cookies

Tollhouse Chocolate Chip Cookies

First I found some chocolate chip cookie dough I froze earlier this year. I make a batch and freeze it in batches of 12 — because if I cook the whole thing, I will eat the whole thing. I love warm cookies.

Steak Fingers

Next I found some steak cutlets. Texans love chicken fried steak. I am not great at cooking them, but they tasted pretty good. I cut the steak in strips, dipped each strip in an egg wash (beaten egg with a splash of milk), then dredged them in flour and seasoning salt. I pan fried them in some vegetable oil and served them with ketchup. You could also serve them with cream gravy.

Chips and Queso

This is just a plain jar of queso with On the Border chips. Sometimes simple is the whole point.

Cowboys Smashed Potatoes

The smashed potatoes were made by boiling red potatoes in slightly salted water. Let them cool a little, then smash them with a potato masher. Drizzle with olive oil and sprinkle with seasoning salt. Cook in the oven at 400°F for about 25–30 minutes, until the edges crisp up, then top with shredded cheddar cheese and return to the heat until the cheese melts. You can throw crumbled bacon on top along with some chopped green onions. Serve with sour cream.

Now the Cowboys should win. This is a great way to end our vacation. Football season is here. Eggs  and Coffee

Breakfast

This is a pretty standard breakfast for me and Papi.  I scrambled up some fresh eggs from the neighbor’s chicken s. She gave me eggs in exchange for a bag of coffee. I got the coffee from work. It was on the giveaway table.

Coffee brewing

The coffee has a nice smooth flavor. I have 6 different styles of coffee pots but this  Mr. Coffee makes the best.

Egg container

I got this eggs container for free from a lady in Lampasas. She was having a sale at a storage unit. She was having some bad times. Her husband had just been released from the hospital critical care unit. He was on a respiratory. They had just been kicked out of their home. She spent one night in their car and one night sleeping in the storage unit. Someone had given her a trailer and she was selling her belongings to fund rental funds for the trailer space rental. Wow times get hard. We found more items to purchase. She and I held hands and prayed over here situation.

I am thankful for my coffee and egg sandwich and all the blessings God showers me and Papi with.

My new egg box will be a constant reminder to me. I know where my blessings come from.
