Pseudo Dementia

Aging sucks. Chuck has been diagnosed with pseudo dementia. Here is the story.

It was Christmas evening 2020. Chuck and one of our sons had been arguing over some issues and the discussion had gotten pretty heated. Chuck had not been his normal self for a few days. Really he had not been his normal self for a few years. More on that story at a later day. I noticed Chuck’s speech had recently started getting garbbled throughout the day. He would not let me take him to the hospital during the day because he did not want to spoil Christmas.

When we got to the hospital Chuck’s blood pressure was elevated. They kept us for a few days. Chuck’s speech was crazy. He was making up words and not realizing what day it was. They sent us home with instructions to see a neurologist.

On New Year’s Eve Chuck went numb on his right side. His son helped him get dressed, I fed him an aspirin and we got him in the car and rushed him to the hospital. All ICU rooms were full due to COVID. We were put in a bed in the CATH lab. Before that we were in the Er . We had arrived at the hospital within the time frame to give Chuck the amazing clot buster medication. Many prayers were said that night in that ER room. The nurse was a believer and we asked the Holy Ghost into the room. He showed up and healed my husband.

We stayed in the hospital for a few days and then were released to go home. Chuck has to take seizure medication. The neurologist said that there is no brain damage. He said there could have possibly been a small stroke but he feels it is more of a situation caused by stress. PTSD has caused this to happen to Chuck.

Now Chuck and I spend much of the day discussing if he still goes to work. We also spend much of the day trying to find his passwords on the computer. The rest of the day it’s spent reassuring him that he is loved by me and I will do everything in my power to continue to care for him in our home here at the farm. Life is changing rapidly and I am holding on for the ride. No physical impairment have shown up thank Goodness.

Broccoli Soup

Broccoli in my Garden

Early in the fall I put out broccoli and cabbage plants in my flower garden. I looked at it the other day and broccoli is actually growing. Needless to say, I have been inspired by it’s beauty.

Ingredients

I opened up my “In the kitchen with Rosie – Oprah’s Favorite Recipes” cookbook written by Rosie Daley. The last recipe I cooked from this book made way too much for me and Chuck. Today I halved the recipe and changed out a few ingredients. I did not have leeks so I used yellow onion. I also did not have fresh basil so I used dry.

Dissolve chicken bullion
Cook broccoli in chicken

I cooked the florets in the chicken water until it was tender and bright green. Cooking the broccoli in the bullion water infuses the depth of flavor.

Chopped onions
Nice green color
Bubbles on edge

I warmed the milk while I cut the onions. Do not boil the milk. Stop heating when small bubbles appear on the edge of the pan.

Heat pan 1minute
Doublespray

Spray a pre-heated pan with cooking spray and cook the onions until limp. Add flour and coat the onions.

Add flour
One minute
Add milk

Combine the onions and milk. Cook to thicken the milk.

Nutmeg
Garlic
Combine

Add the nutmeg, garlic, and broccoli along with the liquid to the milk onion mixture.

Basil
Pepper

Add basil and black pepper.

Present

The soup was beautiful.

Enjoy

Chuck it tasted good and he ate all of his. It tasted very rich and was extremely filling. I will cook it again when my broccoli matures.

I am Sad

It was a sad day at the farm today. The little brown calf did not survive the night. His feeding last night was terrible. His gums were pale and his mouth was cold. I tried a last attempt to feed him.

I looked out the window throughout the night and noticed he had not moved. I went to bed my eyes and Chuck asked me why I was sad. I told him our little baby calf would not survive the night. He told me he was so sorry and that he would help me take care of things in the morning. he is such a sweet man

The Coffee is Brewing

Chuck and I have nine children collectively. We are the extreme blended family. Our family consist of Caucasian, native Americans , Asian Americans, African Americans, Jewish Americans, and Hispanic Americans. We have diversified levels of learning as well. We have a few living on the spectrum, some with learning disabilities, some with physical disabilities and various others.

Today we will be having a belated Christmas with two of our daughters. They are from Chuck’s first marriage to his high school sweetheart. Chuck’s son, from another relationship, lives here at the farm with his girlfriend. (Chuck’s relationship story is a blog all in itself.) These two groups do not always see eye to eye. There may be some good stories coming out of today.

Chuck was admitted to the hospital Christmas Day for a small stroke. He stayed a few days and they released him. He was admitted again on December 30th. We thought he was having a major stroke. They got the clot buster to him and he has no sign of brain damage. He does have seizures that are stabilized with medicine. This situation has changed the dynamics of our household. Before this happened Chuck ordered many Christmas presents on QVC. Everyone will be opening them today. I will be paying off thousands of dollars over the next few months. The smiles will make it worth it. As Chuck says, “It’s just money, we will make more tomorrow.”

Merry Christmas everyone.

Let me start by saying how amazing it is to see people from all over the world reading about how I spend my day. I absolutely love it. If you ever have any questions about my life feel free to ask. I live for cultural exchanges.

Chuck and a I have been host parent for several years. We usually have two high school students from other countries stay in our home every school year. We do this through an organization based out of Germany. It is great fun to have cultural exchanges.

Please please please I encourage your comments and I will do my best to answer each one

Best Brownies Ever

6 for 8.99

I must say I do believe I have found the best brownie mix ever. When I was a kid I was amazed that brownie mix could be made in bulk. I found a recipe and forever had a jar at my house growing up that contained the necessities for making the food of the gods. This mix runs circles around the crap I used to make.

I found this gem at a liquidation store that we have in our small town. I bought two big boxes for a little under $20. I was thrilled. Triple chocolate at a bargain is utter food orgasm. That is twelve batches of brownies.

I am having kids and grand babies over tomorrow for a late Christmas gathering. The other Grandmother got COVID so these guys were quarantined at Christmas. I like to put out sweets so they think I am a pretty good Dinky (official grandma name). We will also have fried chicken from Chicken E.

I apologize that these were baked in my Aunt Caroline’s blueberry cobbler pan. Our family loves blackberries. Another day, another story. Yes, certain pans are used for certain foods in my kitchen. I tell everyone here don’t ask that is just how it is. Also that is another story to tell. Back at it. The brownies are for my visitors. Someone had to taste test. Heavenly is what they are when they are warm. Yum.

Chuck likes no edges and I like the corner pieces. I caught Chuck sneaking too many pieces. He is diabetic. It was an insulin kind of night. That’s why I don’t make many desserts anymore.

Surviving Death

Pink carnations

One of my favorite things is to watch shows and movies on my iPad before I go to sleep. Last night I started a series on Netflix called “Surviving Death”.

The first show in the series was about near death experiences. It was very interesting. It had a few interviews with people who had near death experiences. Many were scientists who had no religious beliefs previous to their experiences.

I am a Child of God. I was brought up in the Christian faith. Heaven and Hell are very real to me.

I have been with several people when they died. I find it fascinating. I have been with three older women during their last moments. One was my mother, the other were fellow church members. The one common thing I remember most was each of the three smelling what they described as the most beautiful flower gardens ever. My fellow church member spoke of opening a gate to a beautiful rose garden. My mother told me how lovely the pink carnations smelled and how vibrant the color was. This conversation was very comforting to me.

I look forward to watching more of this series and possibly commenting more about my views on the subjects covered in the program.

Black Bean and Smoked Chicken Soup

Today I opened my cookbook , “In the Kitchen with Rosie – Oprah’s Favorite Recipes” , written by Rosie Daley. I decided to prepare Black Bean and Smoked Chicken Soup.

I took Chuck to the store to buy ingredients that I did not have. I had some ingredients but had to purchase quite a bit. The recipe calls for skinless, boneless chicken breasts. I had some left over rotisserie chicken in my freezer and used it.

After making my purchases I came home and started cooking my soup. I should have planned better. Beans taste better when they are soaked overnight. I used a quick soak method and it made the bean texture too firm.

I also used too much BBQ sauce on my chicken. It made the soup have a sweeter than normal flavor. The soup also has a pink tinge to it.

Peeled and chopped broccoli stems
Cubed carrots

Drinking a little wine while cooking tends to make my cooking go smoother. LOL

looking good

I realized that I should not use too many broccoli florets. They should be small and not over cooked.

Thickener then evaporated milk
more flavor
Dinner is ready

When I asked the family’s opinion on the dish, they all pretty much had the same opinion. They did not know if they liked it or not. It seemed to be missing something. It was not bad but it was not our taste in food.

Left overs for another day
Dated and labeled for the freezer

We are taking this food journey to introduce new flavors to our pallets. Let’s see what we cook up next. Come along for the ride.

Update on the Calf

The calf has not been taking the noon feeding. I think it has been because it is too full. I have cut back to feeding a full bottle twice a day. I also bought some scours tablets from Tractor Supply and I am putting one in each bottle.

The calf is looking stronger and is walking around the pen more. Today during the feeding he mooed at me and he came to me to eat. He is still sluggish on feeding. I opened the nipple more and feedings are better.

I have new neighbors moving in soon.today they were at the house so aim invited them over to see the calf. They are from the city and are looking forward to moving to the country. They homeschool their children. I look forward to a new friendship with them.

The calf is doing better. I am eager for him to be healthy so he can move out to the field with the rest of the herd. Then I will get a new baby and start the process all over again.

Julie & Julia

Crepes

I just watched the movie Julie & Julia on Netflix. It is a story of a young woman who takes “Mastering the Art of French Cooking”,by Julia Child’s and writes a blog about completing all 524 recipes in 365 days. It was such a sweet story. I really enjoyed it.

I was such a fan of Julia Child’s. I would spend Saturdays watching her show on PBS. I knew that if Julia could cook like that I could give it a try.

I remember watching one day and she was cooking crepes. I was so impressed with how delicate a food could be. I was also impressed with how versatile the thin pancakes were.

I found a recipe for sweet crepes and one for savory crepes. I still have the handwritten card (penmanship of a ten year old) in my recipe box. I put everything in those crepes.

My mother must have been watching me experiment. That year I remember her putting together a formal dinner party for her sisters. She set the table with her finest tablecloth and china. She served crepes for dinner. She had chicken crepes with cream sauce, broccoli in crepes with cheese sauce and for dessert she had flaming cherries jubilee. I had never experienced such elegance. I was in shock.

Years later in my first marriage I learned to make blintzes from those crepes. I filled them with a sweet ricotta mixture and browned them in rich butter. I would serve them for breakfast with cherry pie filling. That was decadent.

I have always loved food and cooking food. I have not always been a good cook. I specialize in desserts. I have been encouraged by this sweet movie to expand my cooking skills and to broaden our menus. I have many cookbooks. There are some that I have never even read. I am inspired to try some new recipes and to share the results with my readers.

Over the teeth and through the gums, look out stomach here it comes.
