Time to Watch My Weight

Feeling Cute

I went to visit some friends on Father’s day. We took a group picture. I wore a cute light green shirt and white shorts. I was feeling really put together. OMG I was the fattest person in the picture.

I recently had a physical and the doctor told me I am pre-diabetic. I have strugglex with my weight for years. It is time to get back to healthy.

I made the committment. I paid for and downloaded the Weight Watcher app. The first day of counting exchanges, I was negative 24. I had eaten a giant cream puff from a bakery in San Antonio. So…this week I have had no Dr. Peppers, have eaten lots of boiled eggs and have plowed through a bag of spinach.

I did not realize how low my energy would be without loads of sugar in my body. Last night I went to bed at 8 pm and wokecup at 5:45 am this morning.

I could not take it anymore. This morning on the way into work I stopped at Mickie Dee’s and got a sausage biscuit and a large Mocha Frappe.

So now I am negative 31 points for the week. I am going to have to run a freakin marathon to get those points down. Oh well, I still have faith.

Recipe of The Day Worm Pie

Worm Pie

I hosted many exchange students over the years. I did not cook many fancy meals for them. I wanted them to see how Americans make ends meet. A favorite dish I made was worm pie.

I brown a pound of hamburger and then add some frozen onions.

I add a can of vegetable neef soup, a can of water, and a package of beef ramen noodles. If you have beef bullion add a cube to the mix.

Put in a dish and top with crescent rolls. Bake for a wile at 350 or 400. I turns out yummy.

Recipe of the Day #2 Cream to Butter

Today I decided to clean the fridge. I like to put whipped cream on berries so I try to keep a quart in the fridge. Today I noticed the expiration date on the cream is getting close. There is no way I would use that much cream,

Being the little farm girl that I am, I just put that cream in my blender. I blended it until it looked watered down, Then I transfered it to a mason jar with a lid. I shook it until the butter formedI put it in a mixing bowl.. I then ran some cool water in the bowl and worked out the excess liquid wth a spatula. Now I have nice fresh butter for my toast in the morning. Go figure.

Recipe of the Day Tuna and Corn

Tuna and Corn

I was eating lunch wirh friends the other day and noticed their tuna salad was much different than the way I fix mine

I was taught to make tuna salad with a can of tuna, a boiled egg, a cubed and cored apple, some sweet picle relish and some Miracle Whip. I don’t enjoy tuna enough to go to this much effort.

My friend taught me her new way to prepare it. Drain a can of tuna. Drain a can of corn. Dump both into a bowl and stir in a couple of tablespoons of McCormick Lime flavored mayanaise. Serve with crackers.

Who would have thought tuna could taste so good and that food could be prepared so quickly. It is really tasty.

Getting my Peepers Looked at

Eyes

I thank Goodness for my eyes. A little over a year ago I had a strange curtain type floater in my left eye. I thought it was a stroke. I went to the emergency clinic and was told I possibly had detached my retina. I was sent to the opthamoligist who sent me to a retina specialist who performed emergency surgery the next morning.

I did not realize that I had a heriditary condition that caused this problem. The eye developed cataracts and I had to have lasik surgery and then another surgery. To top all this I developed a tear in my retina in my right eye and had that corrected with laser surgery.

The past year I have been out of pocket over $10000 and have had crazy lazy eye going on. I have not been able to see correctly out of my left eye. I am finally on the mend and I am so thankful for my vision. I am very blessed and will keep my eyes open to all the beauty God has to show me.

I am at the retina specialist today to make sure every thing is on track.

Neighbor Donkeys Came for a Visit

I received a phone call at work the other day from my neighbor. She told me my donkeys had wandered over to her place. I told her that I only have one donkey. She captured the donkeys and put them in my pasture. I noticed when I got home from work that the neighbor across  the street was missing their donkeys.

I informed the across the street neighbor that I had their donkeys. She said her man would be off work in about an hour and she would send him over. I did not see him that evening.

The next day they knocked on my door. They asked if I would keep their donkeys. The donkeys were too much for them. I said yes and gave the sweet young couple a jar of wild plum jelly and three bars of homemade soap. So now I have three donkeys. LOL

Quilting Inspiration

Quilt book

I love going to antique stores and estate sales. I found this great quilt book at my local antique store for $15. This is a great bargain. I have been inspired by this book to complete some of my quilt projects. . . so I can get started on some in this book.

Quilt blocks

I sewed up some of the quilt blocks I have already cut out. Here are a few of the blocks. There is plenty of red in my scrap box. I put my blocks together to see how the look together. I am not pleased with the outcome. I need to add some other splashes of different colors.

quilt blocks layed out

I will make some more blocks so there is more color variation. I am not pleased with this color combination. I would be pleased to hear your opinions. Thanks in advance.

Mexican Style Rice

I worked in the produce department at my late husband’s grocery store years ago. I worked with a young man that taught me how to make mexican rice. It is the best I have ever had.

Ingredients

The ingredients are 2 cups of rice, 4 cups water, 2 tablespoons butter, a handfull of peas and carrots, green onions, jalepeno slices, 2 blocks each Knorr tomatoe and chicken bullion cubes.

I love the rice cooker.

In a frying pan melt the butter and stir in the rice. Cook the rice until it is golden brown. This opens the rice to absorb the flavors.

Put the cubes into 4 cups of hot water until they disolve.

Add all ingredients to the rice cooker and cook till done. Enjoy.

Note to self: Do not put hot skillet on the tortilla warmer. It will melt.
