Salmon Patties

Salmon

I went to my local pallet liqudation store the other day and found a great deal on canned salmom. The salmon I purchased has no skin or bones. That put a great idea in my head. I was going to make salmon patties

Ingredients

  • small can salmon
  • lime juice
  • green onions
  • crushed saltines
  • fresh parsley
  • egg substitute
  • Salt and pepper
  • Old Bay seasoning

Drain the salmon, chop the onions, and mix it all together. Form patties and fry in some veggie oil until golden brown. These are to die for. I did not put measurements on items because you can just eyeball everything to make it the way you prefer it. Let me know how it turns out.

Squash This

I have found a new favorite food. Last night I made Mexican squash. You start the dish by melting a tablespoon of butter in a frying pan. Cook a small chopped onion in the butter. Slice the squash and put it in with the onion. Next cut corn off a fresh cob and put it in the mix. Cover the pan on low heat for about 10 minutes. Next add some grated cheese on top. Take off the heat and cover to let cheese melt. You can thank me later as you sing my praises. This is good stuff.

The Block Party

Years ago, before I moved to the farm and when my parents still lived there, the neighbor across the street gave a block party. A block in my neighborhood is not like a block in a city. Let me descibe the guest list to you guys. I will not use real names so I do not get myself in trouble.

My mom and step father were there. He was a prison minister/farmer and she was a poet/retired nurse. I was the newly divorced daughter.

The neighbor from the corner lot and his wfe showed up. He was a cattle rancher that was semi retired. He jogs every morning in his shortie shorts. The wife is a doctor. Rumor has it that he inherited and she told him the only way she would live here is if her home looked like a picture postcard. She has a yellow mansion surrounded by a white fence. Beautiful.

The next guest was the alcoholic neighbor that bought ten acres off my step father years ago. He had already been drinking.

The hostess and her farm hand aka lover were there as well.

She had out done herself. We had the party outside in her pasture. She had hired a chuck wagon and a country band. She had also tols my mother she could read some poetry. Oh my …

My mother and step father drove me over in the Caddy. My mother had on her party suit; boots, western skirt, western shirt with silver colar and tons of turquoise oh and did I mention the silver concho belt and the blue felt cowgirl hat. She was something. She had my step father pull the cadillac up to the center of where everyone was seated. He said no but she insisted because she was handicapped. Oh My…

We got out of the car and proceeded to get food and drinks. Everything was great until I realized I was seated next to the alcoholic. He was every bit of 80 years old. He said he heard I was single and offered to  “take me in”. No thank you sir. My mother told me I missed the opportunity to get my step father’s 10 acres back. Oh My…

So my mother took the center stage for her poetry reading when the band took a break. She knows her words by heart and is very dramatic. She is a good poet. .. but not everyone likes poetry. She kept on and on and on. Oh my….

Our hostess took me aside and told me I had to get Mom off the stage. The hostess was paying good money for the band. Oh my… I had to hurt my mothers feelings.

Mom was horrified. We packed ourselves in that Cadillac and high tailed it back home. Oh my.

Pretty Good Salad

Chicken
spinach
cucumber

I had a pretty good salad for dinner last night. I melted 2 tablespoons of butter in a frying pan and cooked two chicken breast in . I seasoned with lemon pepper seasoning. I sliced them halfway through cooking so the seasoning would cover all.

I then put the chicken on top of fresh spinach and sliced cucumbers. I topped with ranch dressing. This was very satisfying.

A Night In The Stroke Ward

I have had some of the worst days of my life recently. My husband has been having some mental struggles since Christmas of last year. Here is a quick review of what’s been happening.

We thought Chuck had a stroke around Christmas. Turns out it was seizures. The doctor said it was pseudodementia because he found no evidence of seizure activity. Was Chuck pretending? If so, this was the meanest thing ever.

Chuck does not want me to work. Retirement is not a possibility if we would like to continue things such as eating. Chuck has expressed his desire for me to not work.

We normally host exchange students. I was hesitant but Chuck said we should continue hosting. That was not a good idea. The first week of the school year one of the students played hookie. Chuck swore there was a stranger in the house. The students had to relocate. This saddened Chuck. He expressed wanting to kill himself.

I took him to the local emergency room. They did not have room due to covid and they released him.

A few days later Chuck spent the day calling me at work and also calling our daughter. He made close to 100 calls telling us he had to go to the hospital. We went.

All of the above was written what will be two years ago this October. Chuck never made it home to me. The diabetes caused his brain to swell which caused epileptic seizures. He spent over two months in the hospital. He contracted Covid in the hospital. He passed from kidney failure and phenomia from the Covid. It was a heartbreaking year.

I hesitated sharing this post. I needed to share it to help heal. There is much more to the story but the memories are still too fresh to share. I am a very possitive person and a lover of life. I do not focus on the sad but on the opportunities life has in store for me. I do miss him though.

OMG I am out of the negative

Scale

OMG. I have just finished my first week of Weight Watchers. It is a weight loss program based on counting exchanges. The plan gives me 23 exchanges per day plus additional exchanges of around 23. If you exercise you get credited more points.

Last week I added extra steps and thought I was eating pretty healthy but by the end of the week I was negative 37 points. I did not even let anyone know that I did not count that bag of Lays baked potatoe chips I tore into last night. LOL I have a background in accounting and seeing a negative number kills me. I was feeling kinda down on myself. Discipline is for children, not for over the hill Dinky.

I decided to stick to the plan of journaling my food. I went to the app this morning to log in my banana, boiled egg and Dr. Pepper Zero.(This is a zero point meal.) Low and behold Just as Jesus forgives our sins, so do the people at Weight Watchers. I now have 19 points + 23 extras. I did have a bean tostada for lunch that costs me 4 points.

It is sweet to know thatcwe can always have do overs in life. They start fresh every week.

Garage Sales

Here in the south we love our garage sales and estate sales. This weekend my friend and I went to the sales near our town. I went to sales that I located using web site http://www.estatesales.net . We came home with many treasures and spent less than $100.

The treasures I found: wonder under, iron on transfers, old wooden thread spools, a beautiful blue vase, depression glass, a cute coffee mug, ice cream dishes, a rusty primitive art candle holder, a floral picture, and a bakers rack.

Here are some pictures of past finds.

My Passion

Beauty

I was speaking to a friend today about “drive”. I told her that as a young person, I was always driven to accomplish something great. I spent my  life trying to climb the corporate ladder or becoming the super “domestic goddess” when I was raising my children.  My drive now is in neutral and I am unsure how to handle it.

My children are grown and I speak to them maybe once a month or so. They are strong independent humans and do not need much from me. That is what parents want for their children.

My job is pretty lack luster. It pays well enough for me to meet my bills. I have plenty and am no longer in stuff collection mode. I have more than enough stuff. It is getting to the point in life for me to scale down so my children will not be burdened with the job when I leave this world.

My friend suggested that I find my passion and find a community of people that have the same passion. She said I will be surprised shat life will bring to me when this happens. Good Advice#Find my passion#Bloom where I am planted
